In 2011, a unique “mobile farm” named The Green Urban Lunch Box was born in Salt Lake City, Utah.

Interestingly, this garden was made inside a school bus. The seats were removed and replaced with big wooden boxes filled with soil where they raise various vegetables. The school bus also comes with a compost and water circulation device powered by the sun.
Shawn Peterson, the founder of this movement, grew up watching his parents and their passion for gardening in their own yard. But once he moved into the city, he didn’t have a big yard and started buying vegetables at the supermarket.
Shawn felt something strange in this way of life. One day, when he was walking in a parking lot, he thought, “Why are there so many spaces to park cars and so little space for gardening?” This inspired him to customize a school bus and grow vegetables inside.
Almost every day, Shawn drives the mobile garden school bus to schools, supermarkets, and local events. There, he interacts with kids and the people of the community to let them know that gardens are possible even in limited spaces, driven by the belief that if vegetables can be grown inside a bus, it can be grown anywhere. He hopes to let more people know about the importance of a diet that is kind to the planet and people’s health.
