      A popular way of preserving herbs is to freeze them. It is easy and quick. They can be frozen in small portions, so you can easily use them for cooking..

      Freezing in ice cube trays:

      • Chop your herb of choice and place into ice cube trays.
      • Then fill with water or olive oil until herbs are covered.
      • Once completely frozen, pop the herb cubes out, and place into freezer bags or a large glass jar, and keep in the freezer.

      The herbs can be added frozen to soups, stews, and sauces. If you make a dressing or herb butter you need to defrost the herbs first.

      I like to freeze a combination of these four herbs: Sage, Thyme, Rosemary, and Oregano. Now I have tasty Italian herbs anytime for my pasta or pizza. dishes. You can also freeze herbs,  twigs and all, in freezer bags. Once the herbs are frozen you can easily crush them with your hands and remove the stems.
